How Long to Steep Green Tea: Errors You Can Undo Today

Steep standard sencha for 90 seconds. Japan's Ministry of Agriculture, Forestry and Fisheries sets the dose at 2 to 3 grams of leaf per 100 mL of water and the temperature at 158°F (70°C) for upper-grade leaf or 194°F (90°C) for everyday grade, with the same 90 seconds either way. Deep-steamed sencha, whose leaf is broken finer during processing, takes 30 seconds. Gyokuro takes 150 seconds at 122–140°F (50–60°C). The second infusion runs about half the first, 45 seconds for sencha, in slightly hotter water. How long each type of green tea actually needs

Japan's agriculture ministry publishes a step-by-step brewing guide for each domestic tea type, and the steeping times in it run from 30 seconds to 150 seconds. Same plant, same country. A five-fold spread.

Read the fukamushi row against the sencha row. Identical plant material, identical dose range, and a third of the time, because extended steaming during manufacture shatters the leaf and multiplies the surface the water can work on. The ministry says so directly in its instruction: the leaf is finely broken during processing, so shorten the infusion.

That mechanism has been measured. Liu and colleagues at Southwest University modeled four brewing variables at once (temperature, time, water-to-tea ratio, particle size) and reported in Food Chemistry in 2018 that particle size carried the largest effect of the four, with models at R² ≥ 0.854. Grind dominates, and most brewing advice never mentions it.

I ran hospital production in Fresno, four thousand trays a day, where every recipe lives as a ratio. You do not scale a sauce by adding "some more" stock. Tea holds the same discipline, and 2 to 3 grams per 100 mL is the number worth memorizing, since every row above is a variation on it.

Where the five-minute number came from

Somebody's tea box says five minutes, and somebody's says three. Both numbers are real, and both come from documents written for graders rather than drinkers.

ISO 3103:2019 is titled Tea — Preparation of liquor for use in sensory tests. It calls for 2 grams of tea per 100 mL of freshly boiling water, in a 150 mL or 310 mL glazed pot, held six minutes for black tea, five minutes for leafy green tea, and three minutes for fanning green tea. China's national sensory standard, GB/T 23776, runs a similar drill: 3 grams into a 150 mL cylindrical cup, boiling water, four minutes.

Neither document is a recipe. Both are diagnostic protocols, built to drag every fault in a leaf into the open so a professional can score it. In a commissary kitchen the QC spec and the service spec were separate documents on purpose. One existed to make problems visible, the other to make food good. Steeping your morning cup on ISO 3103 is plating dinner off the lab sheet.

The temperature half of the problem is easier to fix than people expect, and it does not require a gooseneck kettle. MAFF quantifies the drop. Pouring water from one vessel into another costs 5 to 10°C each transfer, so boiling water into a pot lands near 194°F, and pot into a cup lands near 176°F. Cups keep dropping after that, and the rate depends on the room. Five o'clock has passed here and the air through the open window has finally turned cool, which means my open cup is shedding heat faster tonight than it did at two this afternoon. Baking is the one part of the kitchen I stay out of, because it refuses to behave like the rest of it. Tea behaves: mass in, heat in, time on a clock, a curve you can predict.

What the timer is actually pulling out of the leaf

The USDA Database for the Flavonoid Content of Selected Foods, Release 3.1, lists brewed green tea (NDB 14653) at 70.20 mg of EGCG per 100 mL, 29.18 mg of EGC, 17.94 mg of ECG, and 8.33 mg of epicatechin, from 100 analytical samples for the first three. All USDA infusion values are standardized to a 1% infusion, meaning 1 gram of leaf per 100 mL, and the agency notes that catechin content rises roughly linearly with leaf quantity. Brew at the ministry's 2 to 3 grams per 100 mL and you are in the neighborhood of 250 to 400 mg of flavan-3-ols per 100 mL.

For caffeine, the FDA's consumer figure is 37 mg in a 12-ounce serving of green tea, against 71 mg for black tea. That works out near 10 mg per 100 mL.

Time and temperature do not act on all of those compounds the same way. Labbé, Tremblay and Bazinet tested five temperatures and six durations in Separation and Purification Technology and found the catechins split into two behaviors: EGC and epicatechin came out fast and peaked at 122°F within 20 to 40 minutes, while EGCG, GCG and ECG kept climbing with both heat and time, peaking only at 194°F after 80 minutes. Caffeine sat between them, best extracted at 158–176°F.

The second group is the one that punishes you. Xu and colleagues at the Tea Research Institute of the Chinese Academy of Agricultural Sciences published dose-response curves in Food Chemistry in 2018 showing bitterness tracking EGCG and ECG concentrations at R² = 0.7769, with astringency tracking ECG and flavonol glycosides at R² = 0.7878. Those are precisely the compounds that keep arriving after minute three.

Sensory work puts a number on the result. In a time-intensity study published this year in Food Chemistry: X, a trained panel brewed Longjing under the Chinese standard protocol, 3 grams in 150 mL at 185°F for five minutes, and scored peak astringency at 7.25 on a 10-point scale, lasting 85.7 seconds in the mouth. Maojian under the same treatment hit 8.27. Both of those are strong-to-very-strong on the scale's own anchors, from teas that would be pleasant at 90 seconds.

There is also an upper wall. Perva-Uzunalić and coauthors, working through water extractions from 140°F to boiling for Food Chemistry in 2006, found peak catechin yield at 176°F for 20 minutes or 203°F for 10 minutes, past which catechins begin degrading and epimerizing. Longer and hotter stops paying.

Steamed, pan-fired, and milled: three different clocks

The divide between Japanese and Chinese green tea happens in the first minutes of manufacture, at the step that kills the enzyme responsible for oxidation. Japan steams. China pan-fires.

Manami Monobe of Japan's National Agriculture and Food Research Organization describes the consequence in her 2018 JARQ review. Sencha is dried while being rolled and crumpled, and those crumpled leaves release their contents into water readily, which is why sencha is brewed across a wide temperature range for a relatively short time. Pan-firing produces a drier, harder, flatter leaf. Longjing is pressed against the wok wall, and that surface resists water longer, which is why the trade brews it at 176–185°F for one to two minutes and why it forgives a slow pour. I have found no Chinese government brewing guide with the granularity of the Japanese one, so treat the Longjing numbers as trade practice rather than published spec.

Gyokuro sits at the cool end of the Japanese range for a reason its own ministry states plainly. The guide prescribes 122–140°F to extract theanine fully, lift umami, and hold down bitterness and astringency. Shade-grown leaf carries enough amino acid to reward a cool, long, concentrated steep that would taste like broth from ordinary leaf. Note the dose in that row, roughly 3 grams per 40 mL cup, more than triple the sencha concentration. The guide adds a detail nobody warns you about. Tea leaf absorbs about four times its own weight in water, so 3 grams of gyokuro keeps 12 mL for itself, which is why the pot yields so little.

Jasmine green tea is a scented product rather than a distinct leaf category, so brew it by whatever base it was built on. The scenting shifts what matters. Under GB/T 23776, aroma carries 35% of a jasmine tea's score, the heaviest of the five graded attributes, ahead of taste at 30%. Those aromatics leave in the first seconds, which is the argument for a short first steep and a covered pot.

The bag is a different animal. Lipton's 100% Natural Green Tea ships 20 bags at a net weight of 1.05 ounces, about 1.5 grams each. Drop one in an 8-ounce mug and you are brewing at 0.63 grams per 100 mL, roughly a third of the ISO reference dose and half the USDA's standardized 1%. Underdosed tea tastes thin, so people leave the bag in longer to compensate, and the long steep on milled fannings extracts exactly the galloylated catechins that Xu's panel scored as bitter. Two bags for three minutes beats one bag for six.

Four errors, each one undone in the next cup

  1. Boiling water on good leaf. Boil, then let the kettle stand or transfer the water once, per MAFF's 5–10°C-per-pour rule, until you reach 158°F for upper-grade leaf. An instant-read probe thermometer removes the guesswork permanently.
  2. Timing every green tea alike. Look at the dry leaf before you look at the clock. Intact needles get 90 seconds, broken fine material gets 30.
  3. Underdosing, then over-steeping to fix it. Weigh 2 to 3 grams per 100 mL once, note where it lands in your usual scoop, and stop stretching one bag across a large mug.
  4. Leaving the leaves in the water. MAFF's guide ends every method with the same instruction: pour out the last drop, because anything left in the pot keeps extracting until the second infusion. This is the tea version of the hot box at three in the morning, where the food does not stop cooking simply because service is over.

How long to steep green tea in cold water

Monobe's review reports the cleanest numbers I have seen on this. Against a reference infusion of 176°F for two minutes, sencha steeped one hour in roughly 50°F water yielded about 70% of the EGC, 20% of the EGCG, and 50% of the caffeine. In ice water at 33°F, caffeine fell below 20%, while theanine, glutamic acid and aspartic acid still reached about 80%. Extending the steep beyond an hour did not move those levels.

So cold brew is a selective extraction. You get most of the amino acids that read as sweet and savory, a fifth of the compound that reads as bitter, and half the stimulant. One hour in the refrigerator is the working number, and the long overnight steeps circulating online mostly add convenience.
